3 Ingredient Fruit Juice Jell-O (Jelly for the Aussies!)


When we removed refined sugars from our kids' diets, I never considered Jell-O.  My kids love it.  It used to be an easy treat, boil some water, pour in the box and stir.  They were devastated the first time we walked past a box in the grocery store and they realized I wasn't going to buy it for them anymore.  The thought remained in the back of my head that mums must have made it for their kids prior to processed foods being readily available.  I did some research and discovered that making Jell-O from fruit juice is as simple as making it from a box, and much better for them.  No nasty colours or flavours and it's not pure refined sugar!


Start with your favourite 100% fruit juice (watch out for a long list of additives!).  Our favourite juice for Jell-O is nudie's apple and blackcurrants.  It's really flavourful and sweet. 


Measure out 1 litre of juice (4 cups), and pour into a bowl that you are able to set the Jell-O in. 


In a glass measuring cup, measure 150 ml (2/3 cup) boiling water.  Add 8 teaspoons gelatine.  Stir immediately!  (If you look at my picture closely, you'll see what happens when you don't stir immediately.  The gelatine will clump and you won't be able to stir it in.  The problem with stopping to take a photo!)  Continue stirring until the gelatine is entirely dissolved.


Pour the gelatine mixture into the fruit juice, and stir well, a minimum of 30 seconds, ensuring the gelatine mixture is completely combined with the fruit juice.


Place in the refrigerator for 8 hours or overnight, until set.  That's it!  5 minutes of your time and 3 ingredients for a very yummy treat!  It's great paired with freshly whipped cream!

Ingredients:

1 Litre 100% fruit juice of choice
150 ml (2/3 cup) boiling water
8 teaspoons gelatine
Cream or Ice Cream, to serve.

Method:

Measure 1 litre of juice into a bowl.  In a glass measuring cup, pour 150 ml (2/3 cup) boiling water.  Add 8 teaspoons gelatine, stirring continuously until well combined.  Pour the gelatine mixture into the fruit juice and stir until combined, at least 30 seconds, ensuring it is well mixed.  Place in the refrigerator for 8 hours, or overnight, until set.

Serve with cream or homemade naturally sweet ice cream, if desired.
